Tilt floats on top so says the temp is higher than what my glycol cooled fermenter maintains at the bottom. Then the yeast get their mojo on, the wort circulates and then the temp drops. Boom!

The amber lager has already cleared. WLP860 is consistently a great yeast. Love it.
First pour of my Amber Lager with Mandarina Bavaria hops. WLP860 (Augustiner) yeast. Not lagered yet but just finally chilled. Already pretty clear. I love brewing with this yeast, can now get as a dry yeast. 40 IBU but doesn’t feel quite so bitter with the good malty character. The Mandarina Bavaria hops are subtle but do indeed have some touch of mandarin like citrus. Reminds me of Chinese teas that use dried mandarin skin. This is a winner.
We're testing the Schwarzbier tonight and I think the hard work and extensive lagering paid off. Smells of dried fruit and roasted coffee, tastes of a nice little balance of malty sweetness and roastyness and is super pintable due to the 4.2% ABV. and the combination of open fermentation and three weeks of lagering.

I bottled the Schwarzbier today. I was surprised that I got a little more beer than usual. Apparently, I lose less to evaporation at the lower Lager temperatures which makes sense from a physics perspective but surprised me nonetheless.
Anyway, I love the new pink crown caps!
Looks like an exquisit Cognac but that's my Schwarzbier after three weeks of lagering. It's crystal clear, smells nicely of caramel and roast and tastes schwarzbroty-earthy with hints of roast and a nice, unobtrusive bitterness. Quite a lot of flavor for a beer in the lower 4% ABV range. This gets bottled tomorrow.

I’m leaning more and more towards amber beers. Though still love my Pilsner Urquell “clone” and any German Pilsener I’ve made.
